Chicken Recipe

Yesterday, I made that old chicken recipe that you are all familiar with - chicken with mushroom soup over rice.
Well, that’s what it started out at. Cooked up a mess of onions, and then sauteed the chicken, then added the mushroom soup for it to simmer.
I was going to make rice, but my DH brought in a whole pot of potatoes, already peeled and cut up. Why? He had been cutting the eyes and part of the potatoes to plant - these were seed potatoes. So there was a bunch left over - and he wanted me to cook them.
So, I said ok. Whatever he wants… Well cooked the potatoes, then put them on the plates, mashed them up, put butter on them, and then spooned the chicken, onions, and mushroom soup on top. Wow - we’ve never had it over potatoes before, but it was very good. Will have to add that to my recipe!
Try it - you could even mash the potatoes up - all of them, before putting on the plates. My DH just likes his potatoes cut up, not mashed, and then he can mash them himself if he so desires.

The other day, I decided to make stir fry for supper one night. When we went to the grocery store, I picked up all the things I thought I’d use. Oh you know, bean sprouts, bamboo shoots, mushrooms, those little corns, green peppers, onions, celery, carrots, boneless chicken and pork. Whew!
The day I was going to cook this delight - I took the wok down to clean. Hey, DH, when was the last time we used this wok?
We’ve been in our home for over 11 years. I can’t remember using it since we moved. LOL So a heavy cleaning was needed.
Well, you should have seen this wok when the cooking was all done - you could hardly turn the contents, it was so bulging - everything but the kitchen sink :o) Sorry I didn’t take a picture - but it was terrific.
Half of it is in the freezer - how does defrosted and re-headed stir fry taste? We shall see - I have it on the menu for tomorrow.
The last time we went grocery shopping - I tried to find frozen lumpia - to make with the left over stir fry. Couldn’t find any - and wasn’t in the mood to make any. So we opted for spring rolls. Heated up in the oven. Hope they taste ok.
Anyone out there know of a good source of frozen ready made lumpia? I’d love to keep a supply in the freezer.
